Sausage & Pepper Pasta

Introducing a new recipe – my sausage & pepper pasta with mozzarella! Also known as my take on the Rigatoni Armandos. Inspired by one of my favorite dishes at one of my favorite restaurants, this sausage & pepper pasta is light, flavorful and so easy to make!

Ingredients

  • 1 box of pasta (I prefer rigatoni!)
  • 1 pack of mild Italian sausages, sautéed then sliced; you can also take the sausage out of the casings and cook it on the stovetop – however you like!
  • 1 red pepper, sliced (can add more!)
  • 1 onion, sliced
  • 4-5 garlic cloves, minced
  • 3 TB of tomato paste
  • 1 cup of chicken broth
  • 6 TB of butter
  • Mozzarella chunks/balls sprinkled throughout

Directions

Cook the sausage thoroughly over medium heat, then slice. If you want ground sausage, remove sausage from casings and cook through over medium seasoned with salt and pepper. Set aside.

While pasta is cooking, pour EVOO over medium heat and saute garlic, onions and peppers. Season with salt & pepper. After approx 5 minutes or once onions/peppers are cooked through, add tomato paste and mix. Add sausage back to pan and stir. Add chicken broth, 2 tablespoons of butter and let simmer on medium low heat stirring occasionally.

Once pasta is al dente, add pasta directly to pan with 1 tablespoon of butter and mix. Add mozzarella chunks and and let melt, then serve. Enjoy!
